Crispy golden zucchini fries coated in parmesan panko breadcrumbs and
air fried to perfection in just 35 minutes. No deep frying needed!

Ingredients
2 medium zucchini
½ cup all-purpose flour
2 large eggs
1 cup panko bread crumbs
½ cup finely grated Parmesan
1 teaspoon garlic powder
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Instructions
Preheat air fryer to 400°F. Line basket with parchment.
Slice zucchini into matchsticks about ½ inch wide and 3 inches long. Pat dry.
Place flour in one bowl, beaten eggs in another, and combine panko, Parmesan, garlic powder, salt, and pepper in a third bowl.
Coat zucchini in flour, dip in egg, then dredge in panko mixture.
Arrange in a single layer in the air fryer basket.
Cook 8-10 minutes, flipping halfway through, until golden and crispy. If they do not feel crispy, you can put them in for another 2-3 minutes.
Serve with your favorite dipping sauce.
