- Melt the extra tablespoon of butter in a large skillet over medium-low heat. Add the chopped, separated kataifi. Cook, stirring and turning, until evenly golden and crisp, about 8–12 minutes; follow any package cooking requirements and do not leave pale raw strands. Spread on a plate and cool completely. Keep it dry.
- Heat a conventional oven to 400°F (205°C). Line a 15 x 10-inch rimmed metal pan with heavy-duty foil, covering the rim, and lightly grease it. Arrange the saltines in one snug layer; break crackers to fill gaps. Measure every topping before starting. Keep hot sugar away from children and pets.
- In a heavy 3-quart saucepan, melt the butter with the brown sugar and fine salt over medium-low heat, stirring slowly until combined and no dry sugar pockets remain. Increase to medium. When the mixture is bubbling across the entire surface, start a 3-minute timer. Maintain a steady boil, stirring gently along the bottom to prevent scorching; do not scrape dried crystals from the sides into the mixture. Remove from the heat and carefully stir in the vanilla; it may sputter.
- Immediately drizzle the hot mixture over the whole cracker layer. Use a heatproof spatula to spread gently to the edges. Bake for 5–6 minutes, until bubbling throughout, not just at the edges. Watch closely near the end and remove sooner if the edges darken sharply or smell burnt. The oven finishes the cooking; do not cook this mixture to 300°F on the stove.
- Put the chopped chocolate in a completely dry microwave-safe bowl. Heat at 50% power in 20-second bursts, stirring well between each. Stop while a few pieces remain and stir until smooth. Do not add water, milk, or cream. Melt the 6-ounce (170 g) portion first. Let the baked cracker layer stop bubbling for 1–2 minutes, then spread this chocolate thinly over it. Cool on the counter about 20 minutes, then refrigerate about 15–20 minutes, just until this layer is set.
- Stir the pistachio cream and tahini together, then fold in the fully cooled toasted kataifi. The mixture should be thick and spoonable, with strands still distinct. If your spread is runny, do not add milk or extra liquid; use a thicker product for this recipe. Place small spoonfuls across the set chocolate and gently flatten into a thin, even layer.
- Gently melt the remaining 10 ounces (284 g) chocolate as above and let it cool a little so it is fluid but not hot. Spoon it across the filling and spread with light strokes. Sprinkle with chopped pistachios. Refrigerate about 60 minutes, until firm throughout, then lift out, remove all foil, and portion into about 40 small pieces. Allow a few minutes at room temperature if the chocolate is too brittle to break cleanly.
Notes
Variations: Sesame-free: omit tahini. No-kataifi: replace pastry with 1 cup (25 g) crisp rice cereal and omit the extra tablespoon of butter; texture differs. Dairy-free: use dairy-free butter, chocolate, pistachio cream and suitable pastry/crackers. Refrigerate airtight; plan to serve within 1–2 days for crunch, enjoy within 5 days or the spread’s shorter label guidance.
Times and yield are estimates. Make separate single-pan batches when scaling. See the full article for storage, gifting and troubleshooting.
