Chop your bananas into 1-1¼" slices and place them on a nonstick liner or parchment paper.
Add your chocolate to a small bowl or mug and heat in the microwave for 30 seconds. Take out and stir. Pop back in the microwave for 20 seconds. Take out again and stir well.Repeat in 10 second intervals until chocolate is fully melted. (it should not take more than another 20-30 seconds.)
Using a small spoon, drizzle, or spoon, the melted chocolate over each banana slice so it cascades gently down the sides. Top with your chopped nuts while the chocolate is still wet.
Skewer with Popsicle sticks and set aside for 20 minutes or so for the chocolate to harden. The fridge will help cool them quicker!
Store banana bites in the fridge for 2-3 days or in your freezer wrapped in plastic wrap for 6-8 weeks.Popsicle sticks are wider making them the best kind of stick to use for skewering. The sticks should be inserted while the chocolate is wet so the stick will hold the banana better.
