These Cheesecake Cigars are a fun take on cheesecake served in a crispy little tube. They can be eaten on the go and delivery a crunch that your classic cheesecake can't do. Plus, they are easy to make!
8flour tortillas, street taco size4-5" in diameter
3tablespoonbutter, melted
¼cupwhipping cream
8ozcream cheese, room temperature
⅓cuppowdered sugar
1teaspoonvanilla extract
3-4largestrawberries, diced small
Tortilla Coating
½cupsugar
1tablespooncinnamon
Instructions
Preheat oven to 400℉.
Brush the melted butter over the front and back of your tortillas.
Roll the tortilla tightly onto the cannoli tubes and lay each onto a sheetpan seam down.
Bake for about 10 minutes or until the tortillas are browned and crunchy. (Make sure the seems stay on the bottom or they will open in the oven.)
Add the cinnamon and sugar together and place in a shallow bowl or another ziploc bag. Mix and set aside.
While baking, add the cream cheese, powdered sugar and vanilla extract to a mixing bowl. Cream using a paddle attachment. Once fully mixed together, add the heavy cream and mix on high for 15-20 seconds or until the mixture has lightened in consistency.
Taste test now. Add more sugar if you prefer.
Add mixture to a piping bag with a larger tip or large ziploc bag and set aside.
When your tortillas are done remove them. Carefully slide out the cylinders. Then brush them all over with the melted butter while still warm. Toss them immediately in the cinnamon sugar mixture and shake until fully coated. Set onto a rack until cooled.
When cool, pipe the cheesecake filling into the tortilla cigars making sure to fill them up on both sides.
Dip both ends of the cigar into the strawberries and serve!
