Chocolate covered pineapple is the easiest, healthier dessert or sweet snack you can make! All you need is chocolate, juice pineapple and some toppings!
Cut pineapple into ½” strips then again into triangles about 2” in height. The size is up to you.
Skewer triangles onto the sticks and set aside. (Make sure the point is at the top!)
Melt chocolate in a glass bowl in the microwave in 30 second increments. Mix the chocolate WELL in between intervals. The heat from the bowl will help to melt the chocolate. Repeat until smooth and silky. Do not overheat or your chocolate will seize up and it will be impossible to melt.
Dip pineapple into melted chocolate coating halfway so you can still see the pineapple.
Drizzle with coconut, chocolate chips and/or sea salt and let set.
Optional* Leave a few without any toppings and after they set, drizzle more chocolate onto them for a pretty look.

Expert Tips
Make sure your pineapple is at room temperature before dipping to prevent the chocolate from sweating.
If using canned pineapple, use a paper towel to remove any excess moisture.
Cut the pineapple into rings, chunks, or spears for variety.
Use a good quality chocolate for melting.
Melt the chocolate slowly to prevent burning and seizing.
*Use any toppings you wish! I found these to be the best. Crushed macadamia nuts or pecans are also great additions!
