A classic Piña Colada recipe served on the rocks, that's shaken NOT blended. Summertime is not complete without having at least one piña colada am I right? I've turned this classic frozen cocktail into a super quick blender-free version that's simple, classic and SO delicious!
1½canssweetened coconut milk or cream of coconut(about 20 oz.)
1¼cupslight rumor coconut rum
¼cuplime juice, freshly squeezed
Single Colada
4ozpineapple juice
3½ozsweetened coconut milk or cream of coconut
2ozlight rum
½ozlime juice, freshly squeezed
Instructions
Pitchers
Add all ingredients in a pitcher and stir well. Add ice if serving right away. If not, save ice for individual glasses.
Serve with a straw and garnish with pineapple, lime and a cherry.
Individual
Add all ingredients to a cocktail shaker and shake with approx. 1 cup of ice. Pour into a tall glass filled with crushed ice.

*Freshly juiced pineapple is preferred but not a must. It is frothier and creamier and leads to a frothy and creamy pina colada.*You can use more or less rum based on your preferred taste. Start with 1 cup and add more as needed. Malibu coconut rum is not as strong so I recommend adding more if using this.
