This appetizer is a fun take on your classic roquefort salad but made to be eaten without utensils!

Ingredients

Pears (I like Anjou or Bartlett)

Cup
Craisins

Cup
Fresh Spinach or Arugula

Crumbled Roquefort Cheese

tablespoon
Minced Red Onion

Cup
Chopped Candied Pecans
Vinaigrette Dressing

tablespoon
Olive Oil

tablespoon
Apple Cider Vinegar

tablespoon
Brown Sugar (or white)

tablespoon
Dijon Mustard

teaspoon

Instructions
Trim the stem and slice your pears while still
whole
into ½" slices. Remove any seeds.
Whisk together your vinaigrette dressing in a small bowl until emulsified. Toss in ALL of the other ingredients.
Lay your pear slices flat onto a large serving dish and scoop a spoonful of the roquefort and walnut topping onto each slice. Serve chilled!
Notes
It is best to assemble this appetizer last minute so everything stays crisp and fresh.
