Method
- Line a large rimmed sheet pan with parchment paper or a silicone baking mat. Measure and prepare the pretzels, potato chips, walnuts, and salt before melting the chocolate. Keep bowls and utensils completely dry.
- Put the chopped chocolate in a dry microwave-safe bowl. Heat for 30 seconds at 50% power, then stir thoroughly. Continue in 10–15-second bursts, stirring between each, until only a few small pieces remain. Stir off the heat until smooth; avoid overheating.
- Spread the melted chocolate into a thin, even layer about ⅛–¼ inch thick. Scatter the pretzels, potato chips, and walnuts over the soft chocolate and press in gently.

- If using the caramel, unwrap and warm it in a separate microwave-safe bowl in short bursts, following the package directions, until it can be drizzled. Drizzle over the bark. Finish with ¼ teaspoon flaky salt, or to taste.
- Refrigerate for about 1 hour, or until firm throughout. Thicker bark may need longer.
- Lift from the parchment and break or cut into about 24 small pieces. Store airtight with parchment between layers. See the notes for the different storage instructions for tempered bark and the quick melt-and-chill version, plus Christmas and gifting guidance.
Notes
Yield: About 24 small pieces. One nutrition serving is 1/24 of the batch. For a dessert spread with other sweets, allow about 2 pieces per guest.
Salt: Start with ¼ teaspoon flaky sea salt; the chips and pretzels are already salted. Add more only to taste. Flake size and brand affect saltiness.
Christmas variation: Keep 16 ounces dark chocolate and ½ cup pretzels. Replace the potato chips with ½ cup dried cranberries and the walnuts with ¼ cup chopped unsalted pistachios. Omit the caramel. Add an optional 2-ounce white-chocolate drizzle before chilling. Follow the same method and storage guidance.
Storage: Make 1–3 days ahead for best crunch. Properly tempered bark: store airtight in a cool, dry, dark place around 60–68°F (16–20°C), for up to 2 weeks for best quality. Quick melt-and-chill bark, or a warm kitchen: refrigerate airtight for up to 2 weeks. Let the sealed container warm gradually to a cool room temperature before opening to limit condensation and sugar bloom. Avoid repeated cold-to-warm cycles. Make gift batches fresh rather than freezing them. Follow any stricter storage directions on the caramel package.
Gift quantities: For 6 modest gifts, make 2 batches; for 12, make 4 batches. Divide into about 8 small pieces per gift. Tin capacity varies.
Gifting: For a firmer room-temperature gift, temper the chocolate before spreading and topping, then let it set in a cool, dry room. The 73-minute timing here is for the quick melt-and-chill method; tempering takes additional time. Use an inner food bag or airtight container inside a decorative tin. Include the ingredients and storage instructions for the method used. Keep gifts cool during local delivery.
Nutrition: Estimated for 1 of 24 pieces of the original bark, using generic USDA ingredient data and approximate topping weights. Excludes optional caramel and the Christmas variation. Brands, topping weights, and piece sizes vary.
