Your guests will love the slightly sweet, fruity flavor of this Strawberry Coconut Refresher! It's a light and refreshing beverage that is beautiful and fitting for those hot summer month! Kids will also love sipping on it!
66ozcoconut Water(I use two 33 oz bottles of Vita Coco)
Optional Ingredients
¼cuptoasted coconut flakes for rim*optional
½cupsimple syrup*optional for a sweeter drink
1cupMalibu coconut rum*optional for an alcoholic version
Instructions
Add cleaned and hulled strawberries to a blender or food processor along with the coconut cream. *Reserve 5-7 strawberries for later!
Puree for 10-20 seconds until smooth.
If not using a drink dispenser with a spigot, add strawberry puree to pitcher along with the coconut water. If your pitcher has room, add more water and fill with ice.
Optional* You can add the simple syrup now if you feel the drink needs to be sweeter! (I made this version with less sugar.)
Slice the remaining strawberries and add to your pitcher. Chill before serving and serve with lots of ice and a straw.

Entertaining Tip! Dip the rims of your glasses in honey then toasted coconut flakes and have them ready for guests to pour.If making for a crowd or a larger batch, this pitcher I love. It's 108 oz and serves at least 8-10 people.*Note: You can use regular sweetened coconut cream if you don't have this. BUT know that it has a tendency to separate. Coco Real Coconut Cream is made for drinks to prevent separation and is already slightly sweetened which is why I like it.Feel free to add more simple syrup if you feel the drink needs to be sweeter!
