This Strawberry Coconut Refresher is my take on Starbucks refresher but with much less sugar! It's more like a coconut water drink than a juice. I love serving it in a large pitcher when entertaining in the summer months to both kids and adults!
I love coconut so this drink was a no-brainer for me
My husband? Not so much. But that's okay! I will make him a batch of my Margaritas instead or one of my other drinks.
I love how you can control the sweetness of this drink. I recommend serving a bit of simple syrup on the side for guests to add if they wish.

Ingredients
- Strawberries: Fresh ripe strawberries are best. We will be pureeing them up.
- Coconut Water: I like the Vita Coco brand best.
- Coconut Cream: I love Coco Real Cream because it's slightly sweetened and was made specifically for drinks so it won't separate like canned coconut cream.
- Toasted Coconut Flakes: Option but a nice garnish for the rim!

Is this refresher sweet?
No! I like to think of it as a flavored water rather than a juice or beverage. If you want to make it sweeter, you can add MORE coco cream or simple syrup. The strawberries add sugar as well.
How to serve this refresher when entertaining!
I like to make this in a LARGE pitcher or drink dispenser for everyone to serve themselves. Just know that if you serve in a drink dispenser with a spigot, the spigot might get clogged from the strawberry seeds and pulp. So I suggest straining the puree prior.
If serving in a large pitcher, I highly recommend buying this one! It's hard to find a large pitcher and this one is perfect. Plus it holds ice cold and hot drinks!
Rim your glasses with toasted coconut flakes before serving for a fancy touch! (Use honey to get the coconut to stick!) PS- I toasted my coconut flakes in the oven for 5 minutes.

Strawberry Coconut Refresher
Equipment
- 1 Large pitcher This is the biggest one I use from Amazon at 108oz!
Ingredients
- 2 lbs strawberries, cleaned and hulled
- 22 oz Coco Real Cream of Coconut (See note*)
- 66 oz coconut Water ((I use two 33 oz bottles of Vita Coco))
Optional Ingredients
- ¼ cup toasted coconut flakes for rim (*optional)
- ½ cup simple syrup (*optional for a sweeter drink)
- 1 cup Malibu coconut rum (*optional for an alcoholic version)
Instructions
- Add cleaned and hulled strawberries to a blender or food processor along with the coconut cream. *Reserve 5-7 strawberries for later!
- Puree for 10-20 seconds until smooth.
- If not using a drink dispenser with a spigot, add strawberry puree to pitcher along with the coconut water. If your pitcher has room, add more water and fill with ice.
- Optional* You can add the simple syrup now if you feel the drink needs to be sweeter! (I made this version with less sugar.)
- Slice the remaining strawberries and add to your pitcher. Chill before serving and serve with lots of ice and a straw.
