This pineapple batched cocktail is a new favorite to serve this summer when entertaining a crowd of 6 or more! I love whipping up pre-mixed drinks when entertaining because it makes entertaining at home LESS stressful! And here at AGT, I'm all about less stress. 🙂
I LOVE batched cocktails.
This one is a new favorite not only because I love pineapple but because it is beautiful. It reminds me of my pina colada on the rocks.
I used two kinds of rum to give the drink more complex flavor. Plus, Malibu coconut rum is on the sweeter end so I'd rather not make it overly sweet.
The coconut water adds more 'coconutty' flavor while cutting some more of the sweetness. The lime juice is needed to cut the sweetness as well and pairs well with the pineapple juice.
You can serve this in tall or short glass although I prefer TALLER glasses because then you can drink with a long straw.

Substitutions
This cocktail is made with two rums but you can use ONE if you prefer. You can also swap the rum for another liquor if you choose like vodka or tequila. Most go well with this drink.
Add a jalapeno for a spicy kick if you wish.

Pineapple Paradise
Ingredients
- 32 oz pineapple juice
- 8 oz coconut rum
- 8 oz coconut water
- 4 oz dark spiced rum
- 4 oz lime juice
- ice for serving
- pineapple for garnishing
Instructions
- Mix all ingredients together in a pitcher that is at least 57 ounces.
- This cocktail can be stored for up to 2 weeks in the fridge.
- When you're ready to serve, add lots of ice and garnish with a pineapple wedge. Sip with a straw and enjoy!
