I love serving crostini to guests especially when it's this beautiful! This is my go to appetier during the spring or summer months paired with a cold glass of wine.
Slice the baguette into ½-inch thick pieces and arrange them on a baking sheet. Put each slice lightly with olive oil.
Bake for 8–10 minutes, or until golden and crisp. Let cool slightly.
In a bowl, combine goat cheese and a splash of cream or milk. Whip until smooth and creamy using a hand mixer or food processor.
Spread the whipped goat cheese generously on each crostini. Top with fresh blackberries, gently pressing them into the cheese.
Drizzle with honey and sprinkle with chopped fresh thyme or mint, if desired.Serve immediately and enjoy!
Notes
*I suggest preparing this crostini 1-3 hours in advance. More than that, and the bread may go stale.
