This Frito corn dip with cream cheese is a delicious and creamy appetizer that is perfect for parties, potlucks, game day or any gathering where you want to impress your guests with a tasty snack.
It combines the sweetness of corn with the richness of cream cheese and the tanginess of sour cream, all complemented by savory seasonings and a satisfying crunch from the Frito scoops.

Preparing Your Corn Dip
The most important part of this cheesy corn dip is the chopping!
It's important to dice your peppers finely so they are all uniform with the corn kernels. You don't want larger chunks of peppers in your dip. It will throw off the color, texture and flavor.
Remove all moisture from your corn. We don't want a watery dip.
Cream together your cream cheese and sour cream first. Keep your cream cheese at room temperature to make it easier to mix together.
Add all other ingredients to your cream cheese mixture and mix well.
Serve in a shallow bowl to make dipping easy.
Choosing Your Corn
White, yellow, fresh, frozen?! What is best for a corn dip?
Luckily ALL corn is delicious in any form.
For my corn dip, I prefer using canned sweet corn. I strain it well and then simply toss it in.
You can cut the corn off the cob if you'd like. Just boil the corn as needed and then shave it off and toss into your dip.
To pump up the flavor, you can also grill your corn to give your corn dip a smokier flavor.
I do not recommend using frozen corn unless you thoroughly defrost and drain all the water out first.

Corn Dip Variations & Substitutions
This dip is VERY versatile! That's why I love it so much. Feel free to swap or add any of the following ingredients:
- Bell peppers: Feel free to use any peppers you like. Jalapenos, habanero, or poblanos would go well depending on your heat preference. I love adding in a can of fire roasted jalapenos when I have it on hand.
- Sour cream: Fat free sour cream can be substituted.
- Cheddar Cheese: Swap or add another cheese like Moneterey Jack, swiss, mozzarella, Mexican blend, gouda, or colby jack. *Keep in mind the cheddar adds a beautiful orange color!
- Spices: Add smoked paprika, chili powder, cumin, or corriander for a twist on flavor.
- Herbs: Add in fresh cilantro, parsley, chives, scallions or thyme for a fun twist on flavor.
What To Serve This Dip With

Final Corn Dip Tips
- Make this dip at least a few hours in advance to give the flavors time to get to know each other.
- Serving the dip straight out of the fridge will have a thicker, stiffer consistency. Allowing it to sit for 30 minutes or so will allow it to be more "dippable".
- Serve your dip with a spoon to allow guests to scoop some onto a dish themselves.

Frito Corn Dip With Cream Cheese
Equipment
- 1 cutting board
- 1 chefs knife
- 1 dip bowl
Ingredients
- 6 oz. sour cream
- ¼ cup mayo
- 4 oz cheddar cheese, shredded
- 3 oz cream cheese, room temperature
- 1 15 oz can corn, drained
- ¼ cup red onion, minced
- ⅓ cup bell peppers, small dice (*I use red & green)
- 16 oz bacon
- ½ teaspoon salt
- Frito Lays Scoops (for dipping)

Instructions
- Saute your bacon until brown and crispy. Let cool and chop into bits. Set aside.
- Cream together your cream cheese and sour cream in a large bowl using a hand mixer or a silicone spatula.
- Add in your peppers, onions, spices, corn, bacon, salt and pepper and mix well.
- Add to a shallow dip bowl and chill until ready to serve. Serve with Frito scoops.
