This Creamy Homemade Caesar Dressing can be ready in less than 5 minutes and is SO good! It is made with storebought mayo, anchovy paste and lots of garlic for the best homemade Caesar dressing you're guests are going to love!
I serve Caesar salad ALL the time when entertaining groups of more than 10. It's a healthy, easy FILLING way to fill bellies on a budget. Plus, everyone loves Caesar salads!
I top my salad with my garlicky sourdough croutons and this dressing and usually get TONS of rave reviews.
Ingredients
- Anchovy Paste: This gives your Caesar dressing SO much flavor! I prefer to use anchovy paste as opposed to canned anchovies. Read more as to why below.
- Mayonnaise: This is what will make your dressing creamy and thick.I like to use an avocado mayo but choose whichever mayo you like best.
- Lemon Juice: Lemon adds a brightness and tang. Freshly squeezed only!!
- Dijon: I LOVE dijon in dressings. No yellow mustard is NOT the same. Stoneground mustard or dijon only for the best results.
- Garlic: Freshly minced garlic, no garlic powder.
- Parmesan Cheese: I love the added salty component. Grated over shredded will mix together the best.
- Worcestershire Sauce: Another umami booster, worcestershire is a game changer.
Anchovy Paste
Although I have a Caesar salad dressing on my blog made without anchovies, I do believe the anchovies are what make it so delicious. They add a certain somethin' somethin' to the dressing that is just an umami bomb in your mouth.

Anchovies come in either tin cans or as a paste. I prefer to get the paste that are in tubes. Like the tubes tomato paste comes on.
If you purchase the tin cans, you will need to remove the excess oil and chop them up into a paste. It's not hard to do, it's just an extra step I'd rather not do when entertaining.
Here are two kinds of anchovy paste you can find in the store.
Aleka's Tips
- Adjust the seasoning based on your taste. Anchovies and parmesan cheese are very salty on their own so only adjust the seasoning after you make it.
- If your dressing is TOO thick, add some water! It's an easy and effective way to thin out the dressing and make it "pourable"drizzleable".'
- I suggest making this at least a few hours in advance to give the flavors time to get to know eachother, especially the garlic.
