I made this Whipped Goat Cheese Crostini the other day and was pleasantly surprised as how delicious it was. For an appetizer with less than 5 ingredients, this crostini has become my new favorite things to serve company in the warmer months!

I literally could make a meal out of crostini. It's usually my go-to choice to serve guests when entertaining at home because of how versatile and filling it is.
Plus, crostini can be served year-round depending and cold on what's in season that time of year, like these deliciously juicy, plump BLACKBERRIES!
They are really the star of this dish. The deep purple color pops against the bright green mint leaves. It really screams SPRING IS HERE!
But the goat cheese is truly...the unsung hero.

Whipping Your Goat Cheese
Goat cheese is tangy, soft and super creamy making it PERFECT for spreading onto crostini. By adding a tablespoon of whipping cream, the goat cheese magically turns light and airy!
In a rush? No food processor?
You can completely skip this step if you want since it does take 5 minutes or so to do this. The flavor of the crostini will not be compromised.

Baking Your Crostini
This step is the most important since it is the foundation of our appetizer.
Crostini Tips
☑️ Use a fresh baguette that is no wider than 3".
☑️ Make sure to cut your crostini thin but not too thin.
☑️ Season the bread with olive oil, salt and pepper. Garlic is optional.
☑️ Toast the bread until it's golden brown, not burnt.

Serving Tips
Nobody wants to eat dry, stale or even worse, soppy crostini! No body.
So to ensure your serving crispy crostini to your guests, it's important to toast your bread no more than a few hours prior to serving.
Make sure the bread is crispy, not soft at all. If anything, toast it a little more than you think so when the whipped goat cheese and blackberries are sitting on it, the bread will stay crispy.

Whipped Goat Cheese Blackberry Crostini
Ingredients
Method
- Preheat the oven to 375°F (190°C).
- Slice the baguette into ½-inch thick pieces and arrange them on a baking sheet. Put each slice lightly with olive oil.
- Bake for 8–10 minutes, or until golden and crisp. Let cool slightly.
- In a bowl, combine goat cheese and a splash of cream or milk. Whip until smooth and creamy using a hand mixer or food processor.
- Spread the whipped goat cheese generously on each crostini. Top with fresh blackberries, gently pressing them into the cheese.
- Drizzle with honey and sprinkle with chopped fresh thyme or mint, if desired.Serve immediately and enjoy!
