    These Turkey & Cheese Roll Ups (w/ Avocado) are the perfect mini sandwich for a crowd. Thinly sliced turkey breasts layers with cheese, avocado slices, lettuce and a thyme dressing, your guests will devour these tortilla pinwheels!

    How to make turkey roll ups

    These healthy turkey and cheese roll ups are one of my favorite things to serve friends or family for brunch OR lunch. I like how they are an easy make-ahead recipe that can be served cold straight from the fridge. This gives you more time to relax and enjoy company!

    Making these roll ups are simple. Just make sure you lay out all your ingredients ahead of time so you can layer, wrap and cut. Like an organized assembly line.

    Rolling up your wrap might seem simple but you want to make sure that when you CUT your wrap, it not only tastes good but it LOOKS good.

    Tips for making a "good looking" wraps:

    1. Spread out your ingredients- Spread them all over your tortilla so when you roll them up, your ingredients can be seen beautifully.
    2. Don't be stingy with what's inside! You want a hearty-looking wrap. Not one that looks sad.
    3. Use a good sauce/dressing. This serves two purposes. One is to give the tortilla sandwich moisture and flavor, and the other purpose is to help hold the ingredients together, like glue.

    Choose the RIGHT tortilla!

    For these turkey avocado roll ups, I used LARGE tortillas. The 9" kind. I always tend to keep these tortillas in the freezer because they are quick to defrost and are so versatile!

    My local grocer has the large wraps that come in sun dried tomato, spinach, black bean and your regular white flour so keep an eye out for different kinds. Colors are definitely something to think about when serving food because you want PRETTY food right? Or, for the men, 'eye-catching' food.

    So one thing I want to emphasize is that corn tortillas are NOT something I ever use. I just do not enjoy the flavor or texture of them. Unless, of course, they are deep fried. THEN you can hand me over the salsa and I'll get at it. 😉

    The Creamy Thyme Dressing

    What makes these pinwheels SO much better than other recipes is the combination of sweet and tangy.

    To make the dressing, I use honey, sugar, dijon and fresh herbs. It is delicious! The dressing you use, or in this cause, sauce, can make or break a sandwich. So it is important that you take the time to make sure it is perfect so your roll ups turn out perfectly creamy every time.

    Other Roll Up Variations:

    Tortillas:

    • I suggest using multiple kinds of tortillas so your guests can choose what they like an to add variety and color! You can use spinach, red pepper, gluten free, low carb, or wheat tortillas!

    Cheese:

    • I love American or cheddar for my roll ups but you can also use other cheeses you have on hand. Other cheeses that would be delicious are provolone, havarti, swiss, monterey, or pepper jack. Really, any cheese you can find that is pre-sliced would work!

    Meats:

    • Deli meat is the easiest to find. It comes pre-sliced too! If you want to change up the filling, feel free to use chicken, ham or even roast beef! All would be tasty. *Add bacon bits and you will knock your guests socks off!

    Veggies

    • You can add other veggies if you prefer like sliced tomatoes, peppers, mushrooms or whatever else you like in your sandwiches.

    Ingredients

    Creamy Thyme Dressing

    • 2 Tbsp. Mayonaisse
    • 1 ½ Tsp. Honey
    • 1 Tsp. Dijon
    • ½ Tsp. Minced fresh thyme ((2-3 sprigs))
    • ⅛ Tsp. Garlic Powder
    • ⅛ Tsp. Onion Powder
    • Good Pinch Salt & Pepper

    Roll Ups

    • 2 Large Flour Tortillas ((I used 9" tortillas))
    • 8 Slices Turkey Breast (sliced thin)
    • 8 Slices American or Cheddar Cheese (sliced thin)
    • 1 Cup Mixed Greens, Romaine or Spinach Mix
    • ½ Large Avocado, Thinly Sliced
    • ¼ Large Thinly Sliced Red Onion (*Optional)

    Instructions

    • Mix up your dressing in a small bowl.
    • Lay out your tortillas and spread a generous amount of dressing onto one side.
    • Add a layer of mixed greens, followed by a few slices of red onion (if using), followed by 4 slices of cheese, followed by 4 slices of turkey, and finally 3 or 4 slices of avocado layered down the middle.
    • Start at one end and roll your wrap tightly while keeping everything in tact. When you get to the end, add a bit more dressing on the edge of the tortilla which will act as the 'glue' to hold everything together.
    • Place seam-side down and trim off ends. Then cut your wrap into 5-6 roll ups using a large, sharp knife!
    • Serve with more dressing on the side if you prefer!

    Party Tips*
    -Stuff and roll tortilla ahead of time and keep in plastic wrap in fridge so the tortilla does not dry out. Pull out and slice up your pinwheels when guests arrive.

      Turkey-Cheese-Thyme pinwheels: Fab-u-lous!!

      In a rush, mix it all together and spread the mush. But for a party, these have SUCH 'plate appeal.'

      Photos in this recipe are super-helpful.
      Large 10"-12" wraps and bottom of a spatula for spreading cream cheese
      A layer of spinach leaves with some recipes looks nice in the pinwheel. Do I have to cut the spinach leaves so they look good and even?

        Hi Sally! Thanks for your comment! 🙂 You do not need to cut the leaves, just spread as best you can since you are rolling it anyway. If they are large, I like to individually place them on my wrap so they are even.

        This dressing is everything! Glad I made extra, because it's perfect for sandwiches. I made these pinwheels for a wedding shower and it was a hit! To save time, instead of slicing, I shortly blitzed avocado in my food processor with a bit of lemon juice (leaving it mostly chunky), and spread on tortillas. Thanks for sharing this recipe, Aleka! So yum!

      Made these for a party today and they were delicious. So glad I made extra dressing because I will certainly be using it on my sandwiches or wraps this week!
