You'll rarely find me serving guests plain fruit in the summer. Unless it's berries for the kiddos or a fresh juicy watermelon I've got on hand.
Fruit salads need more help these days. Especially if the fruit is not in season or super ripse. That's why I added a tasty honey lime dressing. It's a sweet and tangy combination that pairs perfectly with the fruit.
And as the fruit soaks up the dressing, it gets even tastier.
Chopping Your Fruit
The chopping is the most tedious step of this fruit salad. When entertaining, I like to have something for my guests to do if they come over earlier. You know those guests who ask, "How can I help?". And I respond, "Why yes, yes you can!". 🙂
The chopping is a mindless task that can be done while sipping on a glass of wine OR, better yet, my Peach White Wine Spritzer.
I recommend purchasing those pre-cut fruit packages from the grocery store instead of the whole fruits themselves since you won't need more than 1 cup of fruit.

Can I make this the day ahead?
I suggest you make it the same day. It will get super juicy and liquidy the longer it sits in the dressing. The acid will start to break down the fruit's cell walls making the fruit a bit mushier.

Honey Lime Chopped Fruit Salad
Ingredients
- 1 cup pineapple, small dice
- 1 cup strawberries, small dice
- 1 cup blueberries
- 1 cup honeydew melon, small dice
- 1 cup cantaloupe
- 1 cup watermelon, small dice
- 1 cup kiwi, small dice
Honey Lime Dressing
- 3 tablespoon honey
- 2 tablespoon lime juice
- 1 teaspoon vanilla extract
- pinch sea salt
- handful fresh mint leaves, roughly chopped

Instructions
- Add all of your chopped fruit to a large bowl.
- Whisk together the honey, lime juice, vanilla extract and sea salt in a small bowl until the honey is dissolved.
- Pour the dressing over the fruit salad. Toss with the mint and serve chilled.
