These Easy Spiced Pie Crust Cookies make a quick and delicious dessert perfect for the fall. They can be made with either leftover or store-bought pie dough so all you need to do is thaw, brush and roll! They are flaky, buttery, chewy and take just 7 minutes to prep!

🛒Ingredient Tips
Cookies
- Pie Crust- You can look for the Pillsbury or generic store-bough crust in the freezer aisle or make your own!
- Butter- Unsalted.
- Brown Sugar- This gives a deeper flavor to your cookies.
- Pumpkin Pie or Apple Pie Spice- You can also use a combination of cinnamon, nutmeg and/or clove.
Spiced Glaze
- Powdered Sugar- This is used to create any icing and cannot be substituted.
- Milk- A little goes a long way. You can also substitute cream.
- Pumpkin/Apple Spice- Either works or you can use cinnamon too!
- Vanilla Extract- Adds a delicious flavor to your icing.
Instructions
Step 1: Preheat oven to 325 degrees F. Mix together your brown sugar and pumpkin or apple pie spice in a small bowl.
Step 2: Brushed softened butter over each sheet of pie crust then sprinkle with brown sugar spice mix.
Step 3: Roll pie crust tightly into one long log and cut bite-sized pieces. Repeat with other pie crust. Aim for about 1 ½" in width.
Step 4: Place pie crust cookies cut-side down onto a baking sheet and bake for about 20 minutes or until lightly browned.
Step 5: In the meantime, prepare your glaze by whisking together all ingredients in a small bowl. You want a nice thick consistency. It should be JUST thick enough to pour.
Step 6: When cookies are out of the oven, pour glaze over top of each while still warm! You can do this directly on the sheet pan OR on a rack. Allow glaze to harden (about 10 minutes) and enjoy!
Tip* You can use ANY store-bought crust to make pumpkin pie or any pie really. It really is such a time saver since homemade pie crust is NOT easy to make. It requires some TLC that I enjoy only on a cold day when I am stuck inside with nothing to do.

These pie crust cookies are just NOT the same without this pumpkin spice glazed icing so don't make them without it! It is SUPER easy to mix up and just makes such a difference when it comes to flavor.
Pie dough only has a LITTLE bit of sugar in it if any? It is NOT very sweet by its lonesome so the glaze is meant to up the sweetness factor while adding another punch of pumpkin flavor!
Tips for making glazed icing:
- Use a whisk when mixing it up! It helps break down the lumps.
- A little milk goes a LONG way so add it in very small amounts! (water works too)
- If your icing becomes too liquidy, add more sugar! You want the consistency just right! Just thick enough to pour!
- Use any spice to flavor your icing!
- Allow the icing to dry before moving to storage containers! They should not be wet when they dry if the glaze consistency was right.

- Cut or shape your pie dough into a rectangle or square so every cookie is uniform.
- Roll your dough tightly so they stay compact while baking.
- Chill your dough before cutting so your cuts are sharp and clean.
- Pinch your pie dough closed so they do not open up (like some of mine did!)
Recipe Variations & Substitutions
You can use any mix of spices you prefer.
Feel free to add crushed pecans or walnuts to your cookies for an added crunch.
Mixing in mini chocolate chips or craisins kicks of the flavor a lot.
Swap the vanilla extact for almond extract.
Storage Tips
Store your pie crust cookies in an airtight container in the fridge or at room temperature for up to 4 days. Freeze your cookies for up to 6 weeks in a freezer friendly container or bag.
