If you're anything like me, the second summer hits, I'm outside grilling anything that doesn't run away first. And these pineapple shrimp skewers?
They're my go-to when I want something that looks fancy but comes together in under 30 minutes. The seasoning is jerk-inspired, meaning they are PACKED with flavor.

Ingredients You’ll Need (Plus a Few Tips!)
🌊 Shrimp
Use large or jumbo shrimp (16/20 count). I leave the tails on for presentation and to make them easier to grab. If using frozen, make sure they’re fully thawed and very dry so the yummy seasoning sticks.
🍍 Pineapple
Fresh is best, but canned chunks will work in a pinch. If you're using fresh, cut them into thick 1- to 1.5-inch chunks so they hold up on the grill.
✨ Jerk Seasoning
I used my own dry jerk spice blend that's unique and really brings the flavor to the party. It's a combo of allspice, cinnamon, garlic, thyme, and more plus, some sneaky heat from cayenne (if you like)!
📆 Wooden Skewers
If you’re using wooden skewers, soak them in water for at least 30 minutes first so they don’t go up in flames.
How to Make Pineapple Shrimp Skewers
Step 1: Season the Shrimp
In a bowl, toss your shrimp with olive oil and a generous amount of jerk seasoning. Let it marinate for at least 15 minutes (longer = bolder flavor).


Step 2: Assemble the Skewers
Thread a piece of shrimp, then pineapple, then a shrimp and repeat. Aim for 3 shrimp and 2-3 pineapple chunks per skewer. Don’t pack 'em too tight or they won’t cook evenly.

Step 3: Grill
Preheat your grill to medium-high. Cook skewers for 2-3 minutes per side until shrimp are opaque and slightly charred. Pineapple should be caramelized and slightly tender.

Pro Tips for Skewer Success
- Soak the skewers for as long as possible to avoid flaming skewers.
- Don’t overcook: Shrimp turn rubbery fast, so keep an eye on it.
- Use tongs for easier flipping.
- Brush with reserved marinade (or melted butter) halfway through for extra juiciness.

Can I use pre-cooked shrimp?
Not recommended for grilling. They’ll overcook and dry out.

How long should I marinate the shrimp?
15-30 minutes is plenty for shrimp. Any longer and the citrusy ingredients in some jerk seasonings might start cooking them.
Can I make these ahead of time?

- Soak wooden skewers in water for at least 30 minutes before grilling. (The longer the better).
- Mix together jerk seasoning in a large bowl and set aside.
- Mix together brown sugar glaze in a small bowl and set aside.
- Prep your pineapple! Slice the tip and bottom first so you have a flat surface to work on. Then slice the skin off using a large chef's knife. Then slice into 4 sections (around the tough center). And finally into 1-1.5" cubes. You will need about 28 cubes!You will have leftover pineapple. I suggest saving it or freezing it for smoothies or frozen margaritas later!
- Make sure shrimp are fully thawed. Pinch the tail end of the shrimp and carefully peel back the shell using the other hand making sure to leave the tail intact. It takes some practice but will get easier as you do it. Repeat with all shrimp.
- Add your shrimp and pineapple into the bowl of seasoning and toss well so they are fully coated.
- Preheat grill on high.
- Thread shrimp onto your skewers in two parts starting with the top of the head and finishing with the tail. (See photos!) Then follow with a pineapple chunk, another shrimp, pineapple and shrimp. Repeat with all skewers.
- Slightly grease your grill. Add skewers so they are parallel with the grill grates. Grill for 2-3 minutes each side until the shrimp are cooked through. Brush skewers once you flip them with your brown sugar glaze.
- Remove from grill and finish with more glaze. Serve hot!
