Chocolate dipped pineapple is the easiest, healthier dessert or sweet snack you can make! You just need some dark chocolate and pineapple to prepare them. They’re a fun treat that’s great for BBQ’s, birthday parties, or just to enjoy as an afternoon snack with your kids.

Chocolate dipped pineapple is an easy, minimal ingredient treat that you can make in just minutes! It’s a simple dessert that really allows the fresh, juicy pineapple to be the star.
The combination of sweet tangy pineapple and rich chocolate is truly incredible. Plus, I love that these are on a popsicle stick because it adds to the fun nature of a dessert.
Like my grilled pineapple, these chocolate covered pineapple pops are ideal when entertaining in the warmer months when guests may not want a heavy dessert.
If you’re serving them at a party, simply pair them with a mocktail and my chocolate covered chips and another bite-size dessert and you’ll have a menu in no time.
✔️What You'll Need
Equipment:
- Microwave safe bowl
- Parchment lined baking sheet
- Popsicle sticks
- Sharp knife

Ingredients:
- Pineapple: I prefer to use fresh pineapple and cut it myself, but you can opt to use pre-cut to save time.
- Chocolate: You want to use a good quality chocolate, Ghirardelli is a great choice.
- Optional Toppings:
- Shredded coconut: Optional. This is added to the chocolate for a tropical bite.
- Mini chocolate chips and sea salt: Optional. Both of these are used for decorating the chocolate pineapple pops
🍍How To Make Chocolate Covered Pineapple
- Prepare a baking sheet by lining it with parchment paper and set aside
- Next, cut your pineapple into chunks and stick a popsicle stick into each piece
- In a microwave safe bowl add your chocolate
- Melt it in the microwave for 30 seconds at a time, stirring in between each interval
- Once 80% of the chocolate is melted, continue stirring and let the residual heat finish melting it and making it smooth and silky, then mix in your shredded coconut
- Working quickly, dip each piece of pineapple into the melted chocolate/coconut mixture and set it on the parchment paper lined baking sheet
- While the chocolate is still slightly melted, sprinkle each pop with the mini chocolate chips and sea salt
- Place the baking sheet into the fridge for 10-15 minutes to allow the chocolate to harden
How To Cut A Pineapple To Skewer
These mini chocolate dipped pineapple pops work with just about any shape! The shape makes the food that much more appealing, like I made these melon sticks.
You could cut your pineapple into chunks, spears, or even try using a melon baller.
Additionally, these would be fun if you used a cookie cutter to celebrate different holidays.
The only shape that won’t work with the popsicle stick is a ring. However, you can still dip pineapple rings into the melted chocolate and decorate as desired.

Tips For Smooth, Silky Melted Chocolate
- Use a good quality chocolate.
- If using chopped chocolate, make sure the pieces are uniform in size.
- Wafers are best because they’re designed to melt. I use them for my famous cake pops.
- Only microwave for 30 seconds at a time, you don’t want to burn or scorch the chocolate.
- Stop microwaving when about 80% of the chocolate is melted. Just keep stirring it and the residual heat will finish melting everything.
- If it’s too thick add in a little bit of coconut oil at a time to thin it out.
Variations for Chocolate Dipped Pineapple
🍫Chocolate:
- Dark chocolate- if you love a bitter bite that's not overly sweet.
- Semi Sweet Chocolate- If you like a bitter-sweet combo. Like I used in my brownie batter dip!
- Milk chocolate- A milkier and sweeter bite.
- White chocolate- This is sweeter and will provide a unique flavor.
🥥Toppings:
- Sprinkles- Chocolate, rainbow or the color to suit your party
- Nonpareils
- Crushed graham crackers
- Chopped macadamia nuts- macadamia, pecans, hazelnuts or walnuts are best
- Crushed Oreos
- Crushed freeze-dried fruit
- Shredded coconut- toast it in the oven for a different flavor
- Chocolate- Drizzle with another kind of chocolate for a decorative touch. Or use mini chocolate chips like I use in my cookie dip!
Storage
You can keep any leftover chocolate dipped pineapple in an airtight container in the fridge for up to 2 days.
Additionally, you can freeze them in a freezer-safe bag for a few months. They do not thaw well, so if you go with this option be sure to eat them like a pineapple popsicle while they’re still frozen!

FAQ’s
Yes, you can use canned but be sure to blot it with a paper towel to remove excess moisture. If you don’t do that the chocolate won’t stick.
I don’t recommend it because it’s a lot more work, but yes you can. If you have to use frozen pineapple you either want to dip it while it’s frozen and immediately re-freeze it, or you have to let it thaw completely, remove the excess moisture, and then finally dip it in the chocolate.

- 1 ripe pineapple
- 10 ounces dark or semi-sweet melting chocolate
Toppings

Instructions
- Hollow your pineapple and trim off the skin.
- Cut pineapple into ½” strips then again into triangles about 2” in height. The size is up to you.
- Skewer triangles onto the sticks and set aside. (Make sure the point is at the top!)
- Melt chocolate in a glass bowl in the microwave in 30 second increments. Mix the chocolate WELL in between intervals. The heat from the bowl will help to melt the chocolate. Repeat until smooth and silky. Do not overheat or your chocolate will seize up and it will be impossible to melt.
- Dip pineapple into melted chocolate coating halfway so you can still see the pineapple.
- Drizzle with coconut, chocolate chips and/or sea salt and let set.
- Optional* Leave a few without any toppings and after they set, drizzle more chocolate onto them for a pretty look.
