Why is my lavender syrup bitter?
You may have overheated your lavender flowers. To ensure your syrup does not end up bitter, simmer over low heat for 10 minutes then strain.

- Lavender Flowers: Dried lavender blossoms can be purchased from Amazon or your local whole foods store. Make sure to look for "culinary lavender" as it's sweeter and less bitter.

Can I Use Fresh Lavender?
Yes. I recommend using lavender buds rather than bloomed flowers for the best flavor. You can use the stem and leaves as well to extract the most flavor from the plant.
