Other than my Chocolate Chip Pudding Cookies and my Chocolate Chip Dip, these cookie dough bites are my favorite cookie recipe on my blog.

As kids, we ignored our parents when they would tell us, "Stop eating the dough!" Why was it SO good?!
Now that we're adults, we can't ignore the fact that salmonella poisoning is a thing. No it isn't common but why risk getting sick? Especially with our own kids. The good thing is that we can STILL enjoy raw cookie dough without worrying about bacteria! Yay!
In this recipe AND in my raw brownie batter dip I do two things that make cookie dough 100% safe!
I love to stash a bunch away in the freezer for a rainy day or when my sweet-craving monster comes out of it's cage. Frozen cookie dough? Heck yes!

🍪Cookie Dough Ingredients
Making cookie dough from scratch that is still 100% edible and safe is pretty simple. Without eggs, this recipe is just 5 simple ingredients.
Those standard cookie dough ingredients are:
- All-Purpose Flour- You can use white, wheat, or a flour substitute. Just make sure to look up the conversion for the flour you use.
- Granulated Sugar - You can use white or brown sugar, but brown sugar gives a rich, molasses flavor that is delicious in cookie dough.
- Vanilla Extract- My favorite part and is a must.
- Butter- Go with the real stuff for this recipe. It adds a lot of flavor and is worth the extra calories.
- Chocolate Chips- I recommend using MINI chocolate chips. The type of chocolate is up to you. You can use milk, semi-sweet or dark chocolate if you wish.
This recipe does not have milk, eggs or cream so you can easily swap out the butter and the chocolate chips for a vegan option!
Baking powder or baking soda is not a required ingredient. It is used to leaven or help cookies rise but since this is a NO BAKE recipe, you can leave it out!
🧑🍳Heat Treating Your Flour
Raw cookie dough requires flour to be heat-treated or "baked". Cookie dough is not unsafe, just as long as no bad bacteria exists. This is where baking our flour comes into play.
Most people don't know that flour is considered RAW out of the package. It has not been treated to kill bacteria so you should not eat it straight out of the bag. If you do, you may get E. coli poisoning. Eeek!
Oven or Microwave It!
You have two options:
- Bake it! At your flour to a baking sheet and bake at 350 degrees F for 5 minutes to kill any bacteria. You want it to reach a temperature of 160 degrees F.
- Microwave it! Place on a plate or in a bowl and heat on high for 1-2 minutes or until it reaches 160 F.
🧑🍳Instructions
Making chocolate chip cookie dough is simple and takes less than 5 minutes!
Step 1: Add your wet ingredients to a mixer and mix until the sugar has dissolved a bit. You don't want to crunch on sugar crystals.
Step 2: While waiting for your butter to cream together with the other ingredients, add your flour to a baking sheet and bake in the oven to kill any bacteria.
Step 3: Add your dry ingredients to your bowl and mix until combined. Wait for your flour to cool before you add it.
Step 4: Mix in your chocolate chips BY HAND last to keep them in tact.
Step 5: Finally, use a mini ice cream scoop to portion out your balls and roll using the palm of your hands.
Step 6: Place your rolled dough balls onto a nonstick mat or parchment paper and refrigerate until they stiffen up a bit.
Tip* make sure your butter is not fully melted when adding it to your batter. Adding melted butter will make the dough super sticky and hard to roll into balls.
Cookie Dough Variations
This recipe is very versatile. You can add in or swap out other ingredients if you prefer!
Additions
- Nuts to your dough like walnuts, pecans or macadamia nuts.
- Coconut flakes if you a coconut fan.
- White chocolate chips for some added flavor.
- Replace chocolate chips with M&M's. Holiday colors will make them festive!
- Rainbow sprinkles for confetti birthday cookie dough.
- Reese's Peanut Butter cups for all my Reese's lovers out there!
- Crushed Oreo cookies for fun.
- Peanut butter.
- Rolled oats and raisings for an oatmeal raisin vibe.
Substitutions
- Butter- You can substitute the butter with vegan butter or a nut butter if you wish.
- Flour- Use GF flour, almond or coconut flour instead of regular white flour. Not all flour substitutions are a 1:1 ratio swap so make sure to look it up. Coconut flour is a 1:4 ratio conversion meaning you need a lot less than normal flour.
- Sugar- You can use coconut sugar, monk fruit or another sugar replacement if your health conscious or wish to make these a bit healthier. Just look up the proper conversion for the sugar you are using as it's not always a 1:1 swap.
Omitting the eggs and baking your flour before adding it to your dough makes cookie dough 100% safe to eat!

Serving Tips
I love eating cookie dough as is straight outta the container. BUT, cookie dough is amazing mixed into or sprinkled on top of a large bowl of vanilla ice cream. You could also add them to a milkshake and blend away!
Serving them with a cold glass of milk is the best way to enjoy them in my opinion!
Storing Cookie Dough
Store your cookie dough balls in a sealed container in the fridge for up to 1 week. You can also, freeze your cookie dough for up to 3 months in a sealed container or freezer bag! I like to eat them straight out of the freezer! 🙂
These bites are one of my favorite out of my chocolate party desserts.
FAQ's
To make cookie dough edible and safe, you need to heat treat the flour by baking it first. You also need to leave out the eggs. Eggs are not necessary if you are not baking your dough.
Use a mini ice cream scooper to scoop out no more than 1 oz. of dough. Roll the dough gently between the palms of your hands until you have round, smooth balls.
The shelf-life of cookie dough is pretty long considering there is no eggs or milk. The only thing that can go bad is the butter however if you store them in the fridge or freezer, they can last up to 3 months.

Edible Cookie Dough Bites (No Bake)
Ingredients
- 8 Tablespoons Salted Butter, room temperature
- ½ Cup Brown Sugar
- 1 Tsp. Vanilla Extract
- 1 Cup All Purpose Flour ((or wheat))
- ½ Cup Mini Chocolate Chips ((I like semi-sweet))
Instructions
- Bake your flour on a baking sheet at 350°F for 5 minutes to kill any bacteria. OR you can microwave it for 60-90 seconds on high.
- While your waiting, mix the butter and sugar together for 2 minutes on high. It is important to use a mixer so the butter and sugar become fluffy.
- Mix in vanilla and then add in your flour (once it is cooled). *If dough is too sticky to roll into a ball, add a little more flour. (Be careful not to add too much!)
- Finally, fold in your mini chocolate chips. Mini works best for bite size balls!
- Use a mini ice cream scoop to get evenly sized balls. Then roll your balls using the palms of your hands until they are nice and smooth.You can choose to cut the balls in half before you roll them for mini versions! (That is what I did.)
- Place your bites on a flat plate or baking sheet and put them in the refrigerator to allow them to harden a bit before stashing them away together. This will keep them from sticking together!

Hi Aleka - can you clarify the amount of butter that should be used? The written recipe says 6 tablespoons, but in the video, you say โa stick of butterโ, which is typically 8 tablespoons.

Tastes so good! Mine was a tiny bit dry for some reason so I added a tinsy bit of water and it worked. I probably should have used milk but the amount was so small that it tasted the exact same.
